I’ve been so unorganized lately. I haven’t even been a little organized. I think of writing a menu then I get overwhelmed by all the beautiful food pins on Pinterest and next thing I know, I’m doomed. I want to eat everything, I can’t focus on just 4 dinners and I spend the next 8 hours pinning and repinning for next time. Only then to realize I’m starving and it’s dark out and there is no way I’m dragging these two to the market. So it’s peanut butter and jelly sammiches for all of us. And fruit.
Monday: Free-for-all night. It will likely be sandwiches for us this evening. We have some nice organic cheese and squishy white bread. I really see toasties happening.
Tuesday: Creamy Spinach & Bacon Pasta
Wednesday: Beef Goulash with Herb Dumplings
Thursday: If hubs has been home Tuesday & Wednesday for dinner we’ll have Smoked Chicken and Corn Chowder but if he hasn’t been home, we’ll have leftovers.
Friday: Chicken Schnitzel with Bacon and Wine with something or other. Mashed potatoes sound good today but by Friday I may want a salad or rice or something. It’s best for me not to get hung up on the smaller details.
Saturday: Hubs birthday celebration! We’re going out to dinner and a movie. I got a sitter and everything. I’ve even impressed myself.
